Flank steaks are from the belly, and for best flavor and tenderness you should marinate it. The steak can then be braised or grilled on high heat. Flank steaks are ideal for recipes that call for strips of steak. When slicing always cut against the grain for best results.

***NOTE: These flank steaks are from mature cows and are going to have a bit more chew to them but way more flavorful than your typical flank steak. Here's an article on why mature beef is the best-tasting around.These are not the same type of flank steaks from corn-fed feedlot beef. Again, way more flavor, way more texture, a little more chewing. These would benefit from a marinade, but it's not absolutely necessary.
