Chicken feet are incredibly nutritious and ideal for making flavorsome stocks and broths. Suzanne doesn't make stock without them. (See chicken backs for her stock recipe.) Yet, many people have not tried cooking with them — and we think that should change! Chicken feet contain a number of nutritious minerals that you don't find in other cuts, and better yet, they taste fantastic. In fact, they are considered a delicacy in many Asian cuisines, so why not give Asian street food a chance? Chicken feet can be fried or slow-cooked or fried and served as a tasty snack. For soups, broths, and stocks, chicken feet provide a new depth of flavor. They work well when combined with whole carcasses and boiled down for the perfect base stock.
Our chickens are fed a locally milled, organic ration from Reedy Fork Organic Farm, and get a fresh salad bar daily. They are harvested on-farm, by the same caring hands that raised them.
