These smoked sausages are made exclusively from Ossabaw pigs, a heritage breed of hog that was singularly saved from extinction by our good friend Eliza at Cane Creek Farm. They thrive on our rotated wooded pastures and consume only a small amount (1 lb) of organic grain daily, and the rest of their diet is entirely forage. The result is meat that not only healed the land, but also can be part of your journey towards wellness, as the pigs concentrate the polyphenols in plants (the things that make broccoli and green tea so good for you) into highly assimilable nutrition.
The first time I made these sausages, I had intended to put them in a recipe but ended up eating most of the package straight out of the pan, they are that good. ~Suzanne
Pork, salt, dextrose, spices, garlic powder, onion powder, sodium phosphates, sassafras powder, sodium erythorbate, spice extractives. Please regard the ingredients listed, as some ingredients in this product are not normally found in our meats. We are fanatical about clean sausage ingredients, and next round the recipe will be simpler. In the meantime, these sausages are amazingly good, and coupled with sauerkraut or greens, you'll have a complete meal. Traditionally, smoked foods would always be consumed with fermented vegetables or greens.
